Apple pie and vin brulè


Premise: In early October, I bought in Slovenia (I was in Gorizia, I could not not go to Nova Gorica) two packets of spices. One to create the gingerbread and the other to aromatize the mulled wine.
But I don't love mulled wine so I thought I'd invent something.


Doses for a cake-holder with a diameter of 18 cm.

  • 1 Cup + 2 Tablespoons White flour ( Type 1 or 00);
  • 1 Cup + 3 Tablespoons  Cornmeal; 
  • 1 packet of yeast for cakes;
  • 1 packet of vanilla sugar;
  • 1/4 Cup Water;
  • 3/4 Cup Vin Brulè * ;
  • 3 Tablespoons Corn oil;
  • 4 Tablespoons Honey;
  • Sal;
  • 2 Red apples.

  • 2 Cup red Wine;
  • 1 Cup Water;
  • 2 Tablespoons Sugar;
  • Orange peel;
  • Lemon pell;
  • Cinnamon stick;
  • 5 Cloves;
  • 4 Juniper berries;
  • 1 Star Anise;
  • Vanilla Aroma;
  • Ginger.


  1. First of all you have to prepare the mulled wine. Pour wine, water, the spices, citrus fruits and sugar into a saucepan. Put on the fire. Boil for at least 10 minutes. Turn off and filter the wine in a jug to make it cool.
  2.  Add the honey to the wine when it is still warm.
  3. Sift the two flours with the yeast, the sal and the sugar.  
  4. Add to the powder wine (Cold). 
  5. Add to oil and water. Work the mixture for a few minutes trying to incorporate air and avoiding the formation of lumps. 
  6. Clean the apples by depriving them of the peel and seeds. Cut them into squares and add them to the mixture.
  7. Preheat the oven to 180 °C. Pour the mixture into a baking-cake and inform, in a ventilated oven for at least 35 minutes.

Decorated with real icing or powdered sugar.
